Many do not realize the struggle being a vegetarian or vegan entails. More often than not, the options presented at restaurants are limited at best, and even when they do carry a vegetarian option it usually some sloppy salad complete with mountains of unhealthy dressing.
However, for all the veggie lovers who enjoy home cooking, here is a sunflower seed falafel recipe that is sure to have you canceling your dinner reservations for a long time.
The health benefits of this recipe go far beyond being free of refined wheat that more traditional falafels recipes contain. The most significant health benefit in this recipe comes from the main ingredient, sunflower seeds. Sunflower seeds are great source of protein, vitamin E and other essential minerals.
Vitamin E is an essential antioxidant that not only benefits the skin it is also helps protect your cells against free radicals which cause cancer. In addition to all of this, the vitamin E found in sunflower seeds helps with the production of red blood cells. This blood cell production will intern increase circulation in the body.
What You Will Need
- 75 g 1/2 cup of sunflower seeds with removed shells.
- 80 g 1/2 cup of cashews.
- 1 tbsp organic almond butter, heat to soften.
- 2 tbsp of chopped basil leaves.
- 1/2 tsp ground cumin.
- 2 tbsp freshly squeezed lemon juice.
- 1 tsp chopped cilantro leaves.
- 1tsp coriander .
- 2 tbsp chopped red capsicum (pepper).
- 1 garlic clove, minced,
- ¼ cup shallot, chopped.
- ¼ tsp of Celtic sea salt.
Optional: 40 g (1/4 cup) toasted sunflower seeds, for coating lettuce leaf, to serve
First preheat your oven to 425 degrees fahrenheit. While you are waiting for the oven to heat up, line a baking tray with baking paper or coconut oil to create a non-stick surface.
Then place cashews, almond butter, basil leaves, cumin, garlic, pepper, Sunflower seeds and shallots into a food processor. Pulse blends ingredients until they combined into a smooth paste.
Once you have achieved the desired constancy, grab an ice cream scooper and start forming the falafel balls. Once you have created the falafel balls, roll the falafel balls in a coating of sunflower seed as a final touch.
Place the falafel balls on the baking pan. Place the falafel balls into the oven and allow them to bake for 20 minutes or until crispy. Once the balls have baked to completion remove them from the oven and allow them to cool for 10 minutes. After they have cooled, enjoy!
